Because today was a tad wintry and the boy and I needed some warming up I cooked this soup for dinner. It is so good & easy to make, heres the recipe.
Moroccan Tomato soup with couscous
olive oil
1 large red onion- finely diced
3 cloves garlic- finely diced
2 tbsp tomato paste
2 400gm tins of diced tomatoes
1 litre chicken or veggie stock
1/2 cup couscous
salt and pepper to taste
chopped coriander
-heat oil in saucepan, add onion & saute on medium heat for 10 minutes
-add garlic, paste, tomatoes & stock, bring to boil then simmer for 15 minutes
-add couscous & simmer for another 10 minutes
-season with salt & pepper
-serve into bowls and garnish with coriander
this recipe serves 4 but can easily be halved.
