mmm beans...

So, as promised here's the baked beans recipe for y'all. It comes from a UK cookbook called 200 Veggie Feasts. The original recipe was a bit too sweet for me, so below is my version.
Home Baked Beans

2 400g cans borlotti beans, drained
1 garlic clove, crushed
1 onion finely chopped
450ml vegetable stock
300ml passata
2 tbsp tomato paste
2 tbsp brown sugar
1 tbsp dijon mustard
1 tbsp red wine vinegar
salt & pepper

Put all the ingredients in a flameproof casserole with a little salt & pepper. Cover & slowly bring to the boil.
Bake in a preheated oven at 160 degrees celsius for 1 & 1/2 hours. Remove lid & bake for a further 30 minutes until the sauce is syrupy.
Use in the many wonderful ways that you would the canned variety.
