tonights dinner: yummy couscous salad

2 zucchini
handful mushies
1 sml onion

1 cup couscous
1 cup boiling water

1 block of fetta
handful semi-dried tomatoes
handful olives
a big handful of rocket

  1. fry off chopped zucchini, mushies and onion with some spices (i use cumin, paprika and vegie stock powder)
  2. pour water over couscous and let it sit for 5 minutes
  3. chop all other ingredients
  4. stir it all in together
  5. season with salt and pepper
  6. serves 2-3 peeps

this is... what scares me

Yep, thats right geckos. They scare the absolute bejesus out of me. The noise they make, the way the look, the way they can run on the vertical and upside down, they glow in the dark, their big sticky toes... you get the picture. Even just talking about them leads to me hyper-ventilating. I don't know how long I can have this image here, maybe I'll just post alot today to send it further down the page. I look forward to next weeks this is.

My artistic skills today have been channelled into prepping my partners racecar for a new paint job, we've come up with an oldschool design based on racecars from the 60's. I'll post a photo when its all finished.

This job is for a friend of mine Ellie who designs and makes clothing with a sustainable approach. Through a mentorship with Craft Victoria she compiled her learnings, experiments and discoveries into a book. And she asked me to bind it for her. Read more about Ellie here.
The papers are recycled and the cover fabric is material used for protective suits (the ones they wear when dealing with hazardous materials).

So far I have made one, then I get approval tomorrow... then another 19 will be made.

today was a good day. I cleaned the kitchen, baked gingerbread cake, caught up with miss emma, ate some cake and drank some tea, and delivered my samuel his forgotten lunch (with some cake of course).
Catching up with miss emma reminds me just how much you need a really good friend in your life, someone who knows you, understands you and loves you inside and out.

while tidying my kitchen i admired my cookbook collection, there is always room for more but these lovelies see me through my week.

this is my favourite cup

I've joined in on a playful game I discovered at three buttons. This is easily my favourite cup, my mother bought it for me after I saw the bambi movie when I was four. I used it alot when I was little but not now. It was in perfect condition until a friend of mine used it for his morning coffees and put a little chip in the lip. So she just sits on my shelf looking pretty.

white chocolate an raspberry baked cheesecake... yum!
its sooo good, here's the recipe

INGREDIENTS

250g plain sweet biscuits (I used arnotts nice)
125g butter, melted
¼ cup (60ml) cream
100g white chocolate, chopped
250g packet cream cheese
½ cup (110g) caster sugar
1 cup (250g) mascarpone cheese
3 eggs, beaten lightly
1 tablespoon cornflour
150g frozen raspberries
1 punnet fresh raspberries

NOTE: This recipe can be made a day ahead.

METHOD

Blend or process the biscuits until the mixture resembles fine breadcrumbs. Transfer to a large bowl; stir in butter. Press biscuit mixture evenly over base and side of 24cm springform tin (actual inside top measurement 23cm); refrigerate for about 30 minutes or until firm.

Preheat oven to slow (150°C/130°C fan-forced). Place cream and chocolate in a small heavy-based saucepan; stir over a low heat until smooth. Cool for 5 minutes.

Beat cream cheese and caster sugar in a medium bowl with an electric mixer until just smooth; add the mascarpone, beat until combined. Beat in eggs, one at a time until just combined; stir in chocolate mixture and cornflour.

Place tin on an oven tray; pour the cheesecake mixture into tin. Gently press the frozen raspberries into surface. Bake in a slow oven for about 55 minutes or until just set. Cool in oven with door ajar for an hour or so. Refrigerate 3 hours or overnight.

Decorate with fresh raspberries and dust with a little sifted icing sugar, if desired.

-baked ham with a balsamic glaze (this was had for breakfast along with Dad's soft fried eggs)
-BBQ chilli coriander tiger prawns
-honey & mustard potato salad
-roast veg salad
-pear, rocket and parmesan salad
and not to forget... a two tiered pavlova with mascapone and berries

30 days of the everyday: Day 1

I read about this great idea at meet me at mikes who discovered it at soulemama's. So I'm a bit late but I'm jumping on the everyday wagon. I've been lazy on the blog front, hiding in my trench spying on other fantastic blogs.
Day one is all about my first ever car, her name is Cooka and I bought her from my best friend. My partner is a mechanic and between the two of us we're giving her a facelift. The process will take all year but I am very happy to have her in my life. One day perhaps, she'll look a little like this...
